Cannoli cake is a take on the beloved Italian cannoli pastry. The best part is the luscious, velvety filling. My sister, Elina, shared this recipe with me. She is always baking up delicious cakes, pastries, and other goodies, not to mention her beautiful cupcakes. She is like the Cupcake Queen. Since she is an amazing baker, I totally trusted her judgement and knew that it would be delicious. I was right. Except it was even better than I expected.

I used a foolproof sponge cake recipe from Cook’s Illustrated, brushing each layer with a chocolate liqueur syrup. The filling is made with ricotta cheese, cream cheese and mascarpone cheese. Doesn’t that sound heavenly? Smooth and creamy, this filling is the perfect texture and combination to complement the tender sponge cake.

  • I started with ivory fondant that I then added extra AmeriColor ivory to darken it.  
  • Then using the Oak Tree Texture Mat I rolled out a section at a time to cover the cake.  
  • I place the fondant over the mat and roll until I can barely see the texture through the mat.

My friend’s wedding is coming up this weekend, so the cakes were baked last week and are happily camping in the freezer, wrapped in plastic and tinfoil, awaiting transport to Vancouver in a few days. Baking the cakes was something I was a little worried about, despite the relative success of the trial run – would they bake evenly, would I have enough batter, would they taste good enough? Turns out all my fears were totally unfounded: the cakes turned out perfectly. They baked in flat, even layers (thanks so the wet towel/cake diaper trick) and they all baked in exactly 50 minutes, no matter which pan size. Even the big 10-inch baked evenly all the way to the middle without a heating core or anything.

Let’s get back to basics and down to business here.  Smoothly iced and structurally sound cakes are the building blocks of almost all decorative cakes. I am happy to share my years of experience and show how to ice a perfectly smooth cake.   Using the following tips and tricks, you will be well on your to creating a variety of designs.  Today, I will be working with Whipped Vanilla Frosting.  The same techniques will apply when using fudge, ganache, cream cheese, and any meringue-based buttercream.  For super-smooth finishes, use Italian Meringue Frosting. You Will Need:

– Even layer cake rounds
– 1 batch buttercream or desired frosting
– Filling of your choice
– Pastry bag and large piping tip
– Turn table
– Large and small off-set spatulas
– Straight edged icing smoother or bench scraper

You know that OREO is America’s favorite cookie, right!?  There’s nothing better than sharing it with with people, except when it is crushed and rolled up into the delicious, simple goodness that is the OREO Cookie Ball. Since the recipe that only calls for three ingredients, the options are virtually endless.

I decided I wanted to create a gorgeous “holiday” way to display these little Oreo balls of deliciousness.  I am having a holiday craft night with some friends this weekend and this will be the perfect dessert worthy of ooh’ing and awe’ing!

I decided to use my favorite Milk Glass Cake Stand to bring to the the event, and came up with a super cute and easy way to display the OREO Balls into a wreath!

A simple chocolate cake gets added snack appeal from bat-shaped sugar cookies. 

For this dessert, you'll need a box of Betty Crocker Super Moist German Chocolate cake mix, which chef Mary Maher enhances with a couple of choice ingredients. To add flavor and moistness, replace the 1 1/3 cup water the recipe calls for with the same amount of grade-A dark maple syrup, and swap the 1/2 cup oil with an equal portion of pumpkin pie filling. 

When it comes to frosting, Maher recommends Duncan Hines Classic Vanilla and Classic Dark-Chocolate Fudge flavors. To make the frosting silky and easier to spread on the cake, she suggests fluffing it for 15 seconds with a hand mixer.

When it comes to decorating cakes and cupcakes, I don’t like to rely on fondant all the time. I adore using chocolate in my cake designs. Even though the chocolate pieces are fragile, I think they make cakes look very appealing with very little effort.

Today, I will show you how to make a Fall- themed chocolate tree. I used it as a topper for a mini cake. You can make a smaller version and use it on top of cupcakes.

To make this tree, you will need the following supplies:

Melted dark chocolate, Melted orange chocolate, Melted yellow chocolate, Melted red chocolate, Piping bags or squeeze bottles, Lollipop sticks, Wax paper, White paper, Tape, Pen.
